Wednesday’s Weekly Menu

I like to plan my menu for the next week on Wednesdays, that way I can have my grocery list ready to go by Friday.  Creating Wednesday’s Weekly Menu for the methodical mom just seemed like the right thing to do:-) I hope you enjoy it and maybe get some ideas on what to put on your menu or even adopt the whole thing as your own! 

Here in the Hunter household, we are transitioning to a plant-based diet (semi-vegetarian).  This decision was made after recent findings (by me) for another post called “When your baby has eczema”.  I discovered the key to good health is in your food!  In case you are wondering what a plant-based diet is:  A plant-based diet is a diet of any animal (including humans) based on foods derived from plants, including vegetables, whole grains, legumes and fruits, but with few or no animal products (Wikipedia).  We have been following this regimen for about a week now and so far it’s been exciting and interesting.  My husband and I have noticed a change in our energy levels and I’ve particularly noticed a change in my digestion (for the better).  I’m  pleased with the way I feel overall so far, and Antoine is definitely on board.  Our children don’t seem to mind the menu changes.  I’m glad to introduce new veggies to them that they haven’t tasted before.  One thing I’ve learned is that vegetarians are very creative!  I didn’t realize how many substitute meat meals were out there!  People have come up with some amazing recipes for vegetarians and vegans.  The few I’ve tried, tasted were really good.  So, without further ado, here is my first ever (on this blog), weekly menu, semi-vegetarian style:

I intentionally excluded the weekend because we usually go out Saturday, and Sunday we’re at church.  Keep in mind this menu isn’t meant to help loose weight or make you super healthy.  It’s only the start of my semi-vegetarian diet that I wanted to share.  Also, check out this free app called Food Planner, it lets you plan your menu, keep track of recipes and make out your grocery list based on your menu!  It really helps me get organized and save time.
